Prep Time - 15 minutes

1. Cut the tomato in wedges

2. Peel the cucumber, slice into ½ inch thick rounds, then half the rounds

3. Thinly slice the onion

4. Combine tomatoes and cucumbers in a bowl, then place the thinly sliced onion on top

5. Add the olives and capers

6. Drizzle with olive oil, a splash of red wine vinegar, and salt to taste

7. Place a piece of feta on top and sprinkle with oregano

Entertaining Tips:

  • Traditionally there is no lettuce or red pepper in the salad – but feel free to modify by adding your favorite leafy greens  or Mediterranean Organic Grilled Red Peppers
  • Often the feta cheese is not cut in cubes, but usually a large piece is placed on top, however cubes and crumbles taste just as delicious
  • Typically the salad is served in a shallow bowl and not mixed ahead of time
